Rollin down the Mississippi...


The weather today made me long for adventurous summer days, or the warm sun of the deep south. I think I shall settle for some good ole southern baking!













Mississippi Mud Bars 


Crust:
1 pk. Oreo cookies crushed in a zip lock bag.
1/3 cup of butter (melted)

Pour the crushed cookies into a bowl and pour the melted butter over the top. Mix together and press into the bottom of your baking dish. Set aside.































Muddy deliciousness:

3/4 cup Hershey's cocoa
1/2 teaspoon baking soda
2/3 cup canola oil
1/2 cup boiling water
2 cups sugar
2 eggs
1-1/2 cups all-purpose flour
1 teaspoon vanilla
1/4 teaspoon salt
2 1/2 cups of miniature marshmallows

In a large bowl, stir cocoa and baking soda together.
Blend 1/3 c. oil into cocoa until well mixed.
Add boiling water, stir until thickened.

Add in sugar and eggs, stirring until smooth. Add flour, vanilla and salt, blending completely. Add half of the amount of marshmallows and pour or mold mixture over the top of the cookie crust.
Bake at 325 degrees for 30 minutes.

Sprinkle the remaining marshmallows and crust on top and return to oven for 3-5 minutes. 
Cool and cut into squares.
